I made this for the All Day Scrap and a few ladies have asked for the recipe .... so here it is.
Lemon Coconut Squares
1/2 cup condensed milk
250gms milk arrowroot biscuits
1 teaspoon of lemon rind (I used a whole lemon!)
1 cup of coconut
1 3/4 cups icing sugar
3 tablespoons of lemon juice
2 tablespoons coconut
Base - Melt butter and condensed milk in a small saucepan. Crush biscuits in a food processor then add lemon rind, coconut then warm butter/milk mixture. Press firmly into a slice time and refrigerate for about an hour.
Icing - Combine icing sugar, lemon juice and soft butter in a bowl until smooth then spread over base and sprinkle with coconut!
